Coffee & cake

Sunday was filled with the flavors of coffee and cake. I'm challenging myself to take more risks and to try out at least one new thing each week. So after John and I relaxed at my favorite coffee place, Big City Coffee,  I baked my first two tier cake. The recipe I used can be found over at Sweetapolita. Two layers wasn't as difficult as I thought it would be! The only issue I ran into was too vanilla-y frosting. For my modifications, see below!





For some reason, my frosting came out very vanilla and so to add some variety to the flavor, I added:
  • 2 tablespoons dutch cocoa powder
  • 1 teaspoon almond extract
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
The results were great! The spices helped to mellow the sweetness and the cocoa powder added a beautiful brown color (and a second delicious flavor)!
